Blueberry Muffins

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold butter
  • 2/3 cup buttermilk
  • 2 teaspoons vanilla
  • 1 egg, beaten
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F and grease one loaf pan.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. Cut in the cold butter with a pastry blender or fork until the mixture is crumbly.
  4. Add the buttermilk, vanilla, and beaten egg.
  5. Stir until the batter is just moist.
  6. Gently fold in the blueberries with a spoon.
  7. Pour the batter into the greased pan.
  8. Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
Kid Cooking Tip: Kids can help measure ingredients, stir the batter, and gently fold in the blueberries so they do not get crushed.
