Blueberry Muffins
These blueberry muffins are a simple berry baking recipe for kids and a great way to practice measuring, mixing, and gently folding fruit into batter.
Ingredients
- 2 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cold butter
- 2/3 cup buttermilk
- 2 teaspoons vanilla
- 1 egg, beaten
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F and grease one loaf pan.
- In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- Cut in the cold butter with a pastry blender or fork until the mixture is crumbly.
- Add the buttermilk, vanilla, and beaten egg.
- Stir until the batter is just moist.
- Gently fold in the blueberries with a spoon.
- Pour the batter into the greased pan.
- Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
