Prep: 10 minutes | Cook:
10–15 minutes | Yield: 4
servings
Ingredients
- 1 (10 oz) package
frozen broccoli
- 2 cups milk
- ⅓ cup flour
- 1 cup water
- 2 chicken bouillon
cubes
- 1 cup half-and-half
- 2 cups Velveeta
cheese, cubed
Instructions
- In a large
microwave-safe bowl (at least 2–3 quarts), whisk
together milk, flour, water, bouillon cubes, and
half-and-half until smooth.
- Stir in frozen
broccoli.
- Microwave on
HIGH in 2-minute intervals, stirring well each
time, until broccoli is tender and soup begins
to thicken (about 6–10 minutes).
- Stir in cubed
cheese.
- Microwave in
30–60 second intervals, stirring each time,
until cheese is melted and soup is creamy and
hot.
- Let stand 2
minutes before serving (soup thickens as it
cools slightly).
Kid-Friendly Tips
- Kids can whisk the base and measure
ingredients
- Adults should handle hot bowls and microwave
heating
- Stirring often prevents lumps and helps the
cheese melt smoothly
Easy Variations
- Add shredded carrots for extra color
- Stir in cooked diced chicken for a heartier
soup
- Blend part of the soup for a smoother texture
(adult help)
Notes
Microwave times vary by
wattage. Use a large bowl to prevent boil-overs,
and stir well each time you microwave. If soup
gets too thick, add a splash of milk and whisk to
loosen.
