This simpler chicken enchilada recipe uses shredded chicken, cheddar cheese, tortillas, and red enchilada sauce. Add peppers or olives to the filling if your family enjoys them.
Ingredients
2-3 cups chopped or shredded cooked chicken
1 green pepper, chopped, optional
Chopped olives, optional
Salsa, as desired
8 flour tortillas
Shredded cheddar cheese, as desired
1-2 cans red enchilada sauce
1 cup sour cream
Salsa, for serving
1 cup sour cream, for serving
Salt and pepper, to taste
Directions
Preheat the oven to 375F.
Place the cooked chicken in a mixing bowl.
Add shredded cheddar cheese and the chopped green pepper or olives, if using.
Season with salt and pepper and stir the filling together.
Spoon the chicken mixture down the center of each tortilla.
Roll the tortillas and place them seam-side down in a baking dish.
Pour the red enchilada sauce over the enchiladas.
Sprinkle additional cheddar cheese over the top.
Bake for 20-25 minutes, or until the enchiladas are hot and the cheese is melted.
