Chicken Satay with Peanut Sauce
This recipe lets kids practice making both a simple marinade and a creamy peanut sauce while learning how seasonings work together.
Marinade Ingredients
- 6 to 8 chicken drumsticks (or chicken breasts or thighs)
- 1/4 cup orange juice
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 garlic cloves, minced
- 1 tablespoon grated fresh ginger or 1 teaspoon ground ginger
Peanut Sauce Ingredients
- 1/2 cup chicken broth
- 1/2 cup orange juice
- 1/4 cup creamy peanut butter
Directions
- Whisk together the orange juice, soy sauce, honey, garlic, and ginger.
- Pour the marinade into a large zip-top bag.
- Add the chicken and refrigerate for several hours.
- In a small bowl, stir together the chicken broth, orange juice, and peanut butter until smooth. Refrigerate until needed.
- Place the marinated chicken in a baking dish.
- Bake for about 15 minutes.
- Pour the peanut sauce over the chicken and continue baking another 15 to 20 minutes, or until the chicken reaches a safe internal temperature and is no longer pink.
