Chicken Satay with Peanut Sauce

This recipe lets kids practice making both a simple marinade and a creamy peanut sauce while learning how seasonings work together.

Marinade Ingredients

  • 6 to 8 chicken drumsticks (or chicken breasts or thighs)
  • 1/4 cup orange juice
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 garlic cloves, minced
  • 1 tablespoon grated fresh ginger or 1 teaspoon ground ginger

Peanut Sauce Ingredients

  • 1/2 cup chicken broth
  • 1/2 cup orange juice
  • 1/4 cup creamy peanut butter

Directions

  1. Whisk together the orange juice, soy sauce, honey, garlic, and ginger.
  2. Pour the marinade into a large zip-top bag.
  3. Add the chicken and refrigerate for several hours.
  4. In a small bowl, stir together the chicken broth, orange juice, and peanut butter until smooth. Refrigerate until needed.
  5. Place the marinated chicken in a baking dish.
  6. Bake for about 15 minutes.
  7. Pour the peanut sauce over the chicken and continue baking another 15 to 20 minutes, or until the chicken reaches a safe internal temperature and is no longer pink.
