Chive and Onion Cheesy Potatoes (Microwave)

Ingredients

  • 1 (10¾ oz) can cream of celery soup
  • 1 (8 oz) package chive & onion cream cheese
  • 2 cups frozen cubed potatoes
  • ½ cup cheddar cheese, shredded

Instructions

  1. In a microwave-safe casserole dish, stir together cream of celery soup and chive & onion cream cheese.
  2. Microwave for 2 minutes, then stir well until cream cheese is mostly melted into the soup (microwave 30–60 seconds more if needed).
  3. Fold in frozen cubed potatoes and stir until evenly coated.
  4. Cover and microwave for about 10 minutes, stirring once halfway through, until potatoes are tender.
  5. Sprinkle shredded cheddar cheese over the top.
  6. Microwave an additional 2 minutes, or until cheese is melted.
  7. Let stand 2 minutes before serving (sauce thickens as it cools slightly).
