Ingredients
- 1 (10¾ oz) can cream
of celery soup
- 1 (8 oz) package
chive & onion cream cheese
- 2 cups frozen cubed
potatoes
- ½ cup cheddar
cheese, shredded
Instructions
- In a
microwave-safe casserole dish, stir together
cream of celery soup and chive & onion cream
cheese.
- Microwave for 2
minutes, then stir well until cream cheese is
mostly melted into the soup (microwave 30–60
seconds more if needed).
- Fold in frozen
cubed potatoes and stir until evenly coated.
- Cover and
microwave for about 10 minutes, stirring once
halfway through, until potatoes are tender.
- Sprinkle
shredded cheddar cheese over the top.
- Microwave an
additional 2 minutes, or until cheese is melted.
- Let stand 2
minutes before serving (sauce thickens as it
cools slightly).
