Coconut Cream Pie
This coconut cream pie is smooth, creamy, and filled with coconut flavor. It is a great recipe for older kids to help with and perfect for special occasions.
Ingredients
- 2/3 cup sugar
- 1/3 cup cornstarch
- 2 tablespoons flour
- 1/4 teaspoon salt
- 3 eggs
- 3 cups milk
- 1 tablespoon butter
- 2 teaspoons vanilla
- 1 1/4 cups shredded coconut
- 1 baked 9-inch pie crust, cooled
- Whipped topping, optional
- Toasted coconut, optional
Instructions
- In a saucepan, mix the sugar, cornstarch, flour, and salt.
- Stir in the eggs until smooth.
- Gradually add the milk while stirring.
- Cook over medium heat, stirring constantly until the mixture thickens and begins to boil.
- Continue cooking and stirring for 1 minute.
- Remove from heat and stir in butter and vanilla.
- Add shredded coconut and mix well.
- Pour the filling into the baked pie crust.
- Cover and chill for at least 2 hours.
- Before serving, top with whipped topping and sprinkle with toasted coconut.
Kid Cooking Tip: Kids can help measure ingredients, stir the filling, and sprinkle coconut on top.
