Coconut Cream Pie

This coconut cream pie is smooth, creamy, and filled with coconut flavor. It is a great recipe for older kids to help with and perfect for special occasions.

Ingredients

  • 2/3 cup sugar
  • 1/3 cup cornstarch
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 3 eggs
  • 3 cups milk
  • 1 tablespoon butter
  • 2 teaspoons vanilla
  • 1 1/4 cups shredded coconut
  • 1 baked 9-inch pie crust, cooled
  • Whipped topping, optional
  • Toasted coconut, optional

Instructions

  1. In a saucepan, mix the sugar, cornstarch, flour, and salt.
  2. Stir in the eggs until smooth.
  3. Gradually add the milk while stirring.
  4. Cook over medium heat, stirring constantly until the mixture thickens and begins to boil.
  5. Continue cooking and stirring for 1 minute.
  6. Remove from heat and stir in butter and vanilla.
  7. Add shredded coconut and mix well.
  8. Pour the filling into the baked pie crust.
  9. Cover and chill for at least 2 hours.
  10. Before serving, top with whipped topping and sprinkle with toasted coconut.
Kid Cooking Tip: Kids can help measure ingredients, stir the filling, and sprinkle coconut on top.
