Ingredients
12 ounces pasta noodles, such as rotini, penne, shells, or egg noodles
1 pound lean ground beef
1 (24-ounce) jar spaghetti sauce
8 ounces cream cheese, softened
8 ounces sour cream
1 cup cottage cheese
1 1/2 cups shredded mozzarella cheese
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Salt and black pepper, to taste
Directions
Preheat the oven to 350 F. Lightly grease a 9 x 13-inch casserole dish.
Cook the pasta according to the package directions until just tender. Drain well.
While the pasta cooks, combine the softened cream cheese, sour cream, cottage cheese, garlic powder, and Italian seasoning in a large mixing bowl.
Add the drained pasta to the cheese mixture and stir until the noodles are evenly coated.
Brown the ground beef in a large skillet over medium heat. Break it into small pieces as it cooks.
Drain the excess grease, then stir the spaghetti sauce into the cooked beef.
Spread a thin layer of meat sauce over the bottom of the prepared casserole dish.
Spoon half of the creamy noodle mixture over the sauce and spread it evenly.
Add about half of the remaining meat sauce.
Layer the remaining creamy noodles over the meat sauce.
Spread the rest of the meat sauce over the top.
Sprinkle evenly with shredded mozzarella cheese.
Bake uncovered for 20-25 minutes, or until the casserole is bubbling, the cheese is melted, and the center reaches 165°F.
Let the casserole rest for 5-10 minutes before serving.
Kid Chef Jobs
Measure the cream cheese, sour cream, cottage cheese, seasonings, and mozzarella.
Stir together the creamy cheese mixture.
Add the cooked noodles and gently mix until coated.
Help layer the noodles and meat sauce in the casserole dish.
Sprinkle mozzarella cheese over the top.
Adult Helper
An adult should boil and drain the pasta, brown and drain the ground beef, handle the hot skillet and casserole dish, and place the casserole in and out of the oven.
Soften the Cream Cheese First
Let the cream cheese sit at room temperature for about 20-30 minutes before mixing. Softened cream cheese blends more smoothly with the sour cream and cottage cheese and coats the noodles more evenly.
Easy Variations
Replace the ground beef with ground turkey, ground chicken, Italian sausage, or a mixture of meats.
Use ricotta cheese in place of cottage cheese.
Replace some or all of the sour cream with plain Greek yogurt.
Add cooked spinach, mushrooms, zucchini, bell peppers, onions, or shredded carrots.
Use cheddar, Monterey Jack, provolone, Parmesan, or an Italian cheese blend.
Add basil, oregano, parsley, onion powder, or a small pinch of crushed red pepper.
