A
quick single-serving lasagna made right in a mug!
Layers of tender lasagna noodles, pizza sauce,
ricotta (or cottage cheese), spinach, and melty
cheese cook in minutes in the microwave—perfect for
lunch, after-school snacks, or beginner kid chefs
(with adult help).

Ingredients
- 2 ready-to-serve
lasagna sheets
- 6 oz water
- 1 teaspoon olive oil
or cooking spray
- 3 tablespoons pizza
sauce
- 4 tablespoons
ricotta or cottage cheese
- 3 tablespoons
spinach (fresh chopped or thawed/drained)
- 1 tablespoon cheddar
cheese (or mozzarella), shredded
- (Optional) 2
tablespoons cooked sausage
Instructions
- Break lasagna
sheets into pieces that fit inside a large
microwave-safe mug.
- Lightly coat
the inside of the mug with olive oil or cooking
spray to prevent sticking.
- Place pasta
pieces in the mug and pour in water to cover.
- Microwave for
3–4 minutes, or until pasta looks tender.
- Carefully pour
off the water and set pasta aside (you can leave
pasta in the mug).
- Add a spoonful
of pizza sauce, then layer in a few pasta
pieces. Add spinach, ricotta/cottage cheese, and
sausage (if using).
- Sprinkle a
little shredded cheese on top, then repeat
layers starting with pasta.
- Cover the mug
with a microwave-safe cover or paper towel to
prevent splatters.
- Microwave for
about 3 minutes, or until hot all the way
through.
- Let cool 1–2
minutes before eating (mug will be very hot).
Kid-Friendly Tips
- Kids can build the layers (sauce, noodles,
cheese) like a “lasagna stack”
- Adults should handle draining hot water and
removing the mug from the microwave
- Use cooked sausage only (leftovers work
great!)
Easy Variations
- Swap cheddar for mozzarella for a more classic
lasagna flavor
- Use pesto instead of pizza sauce for a green
“spinach pesto” version
- Add chopped mushrooms or diced bell peppers
(pre-cooked or very small pieces)
Notes
Microwave times vary by
wattage and mug size. If lasagna isn’t hot in the
center, microwave in 20–30 second bursts. Drain
spinach well so the mug lasagna doesn’t get
watery.
