Lemony Pudding

This baked lemon pudding has a bright citrus flavor and a soft, pudding-like texture.

Ingredients

  • 1/4 cup butter
  • 2 lemons, grated rind and juice
  • 1/2 cup sugar
  • 2 eggs, separated
  • 1/2 cup self-rising flour
  • 1 1/4 cups milk

Directions

  1. Preheat the oven to 375 degrees and lightly grease a 5-cup baking dish.
  2. Beat together the butter, lemon rind, and sugar until light and fluffy.
  3. Add the egg yolks and flour and beat until well blended.
  4. Gradually beat in the lemon juice and milk.
  5. Fold the egg whites into the mixture.
  6. Spoon into the prepared dish.
  7. Place the dish into a slightly larger roasting pan and fill with enough water to come halfway up the sides.
  8. Bake 45 minutes or until the top is golden brown.
Note: The mixture may look curdled before baking, and that is okay.

Tip:
This is a good recipe for older kids helping with measured ingredients and mixing.
