Lemony Pudding
This baked lemon pudding has a bright citrus flavor and a soft, pudding-like texture.

Ingredients
- 1/4 cup butter
- 2 lemons, grated rind and juice
- 1/2 cup sugar
- 2 eggs, separated
- 1/2 cup self-rising flour
- 1 1/4 cups milk
Directions
- Preheat the oven to 375 degrees and lightly grease a 5-cup baking dish.
- Beat together the butter, lemon rind, and sugar until light and fluffy.
- Add the egg yolks and flour and beat until well blended.
- Gradually beat in the lemon juice and milk.
- Fold the egg whites into the mixture.
- Spoon into the prepared dish.
- Place the dish into a slightly larger roasting pan and fill with enough water to come halfway up the sides.
- Bake 45 minutes or until the top is golden brown.
Note: The mixture may look curdled before baking, and that is okay.
Tip: This is a good recipe for older kids helping with measured ingredients and mixing.
