Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 carrots, diced or grated
  • 4 celery stalks, diced (optional but recommended)
  • 4 garlic cloves, minced
  • 2 large cans (28 ounces each) diced tomatoes, with juice
  • 7 cups vegetable broth or 4 cups chicken broth plus 3 cups water for the sausage version
  • 1 1/2 cups dried lentils, rinsed
  • 3/4 teaspoon dried marjoram
  • Salt and black pepper, to taste
  • Optional: chopped fresh parsley for serving
  • Optional: 1 cup alphabet pasta, added during the last 8–10 minutes

Turkey Kielbasa Variation

  • 12 ounces turkey kielbasa, sliced

Cook the sliced turkey kielbasa with the onion before adding the remaining ingredients.

Directions

  1. Heat the olive oil in a large soup pot over medium heat.
  2. If making the sausage version, cook the sliced turkey kielbasa for 3–4 minutes until lightly browned.
  3. Add the onion, carrots, celery, and garlic. Cook for 5–7 minutes until the vegetables begin to soften.
  4. Stir in the diced tomatoes, broth, marjoram, and rinsed lentils.
  5. Bring the soup to a gentle boil.
  6. Reduce the heat to low, partially cover, and simmer for 40–50 minutes until the lentils are tender.
  7. If using alphabet pasta, stir it in during the last 8–10 minutes of cooking.
  8. Season with salt, pepper, and chopped parsley before serving.

Easy Variations

  • Make it vegetarian by using vegetable broth and skipping the sausage.
  • Add turkey kielbasa, smoked sausage, or leftover ham for extra protein.
  • Stir in chopped spinach or kale during the last 5 minutes of cooking.
