Mango Meat Loaf (Microwave)

Ingredients

  • 1 lb lean ground beef
  • 1 cup chopped mango
  • 1 cup bread crumbs
  • 1 egg
  • 1 onion, grated
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine ground beef, chopped mango, bread crumbs, egg, grated onion, salt, and pepper.
  2. Mix with clean hands until evenly combined (do not overmix).
  3. Shape mixture into a loaf and place into a glass loaf pan.
  4. Cover with microwave-safe waxed paper or a vented microwave-safe cover.
  5. Microwave for 15–20 minutes, or until a meat thermometer reads 160°F in the center of the loaf.
  6. Let rest 5 minutes before slicing and serving.
