This Mediterranean-inspired pasta salad combines cheese-filled tortellini with crisp vegetables, feta cheese, olives and a simple vinaigrette. It's fresh, colorful and hearty enough to serve as a light lunch while also making an excellent side dish for grilled chicken or fish.

  1. Cook the tortellini according to the package directions until just tender.

  4. Whisk together the olive oil, red wine vinegar, oregano, garlic, salt and pepper.
  5. Pour the dressing over the salad and gently toss until evenly coated.
  6. Stir in the fresh basil, if using.
  7. Cover and refrigerate for at least 30 minutes before serving.
  8. Toss once more before serving and adjust the seasoning if needed.
