Baked Not Fried Ice Cream

This simple dessert coats vanilla ice cream in crushed cornflakes, freezes it, and quickly broils the outside before serving.

Baked Not Fried Ice Cream

Ingredients

  • 3 cups cornflakes, crushed
  • Vanilla ice cream

Directions

  1. Place cornflakes in a zip-top bag and crush with a rolling pin or kitchen mallet.
  2. Scoop vanilla ice cream into small scoops and roll each scoop into a ball.
  3. Coat each ice cream ball with crushed cornflakes.
  4. Place on a cookie sheet lined with waxed paper.
  5. Freeze several hours.
  6. Before serving, broil for about 30 seconds, just until the cornflakes are lightly browned.

Kid-Friendly Tip: Kids can crush the cornflakes and roll the ice cream in the coating.
