Leprechaun Dessert (Mint Ice Cream Oreo Slice)

A super easy, no-bake mint ice cream dessert with a crunchy cookie base and chocolate drizzle. It’s perfect for St. Patrick’s Day—kids can crush cookies, layer ice cream, and decorate the top. Slice it like cake or scoop it like ice cream pie!

Ingredients

  • ½ gallon mint chocolate chip ice cream (softened 5–10 minutes)
  • 1½–2 cups crushed Oreo cookies (or chocolate sandwich cookies)
  • Hershey’s chocolate syrup (for drizzling)
  • (Optional) Whipped cream
  • (Optional) Green sprinkles or gold sugar

Instructions

  1. Let ice cream sit at room temperature for 5–10 minutes so it’s scoopable (not melted).
  2. Sprinkle crushed cookies across the bottom of a 9x13-inch pan (or use a pie dish for a thicker dessert). Press lightly to form a crunchy base.
  3. Spoon ice cream over the cookie base and spread into an even layer.
  4. Drizzle chocolate syrup over the top in zig-zag lines. Sprinkle with extra crushed cookies.
  5. Freeze 3–4 hours (or until firm). Slice into squares or scoop to serve.

  • Kids can crush cookies in a zip-top bag using a rolling pin
  • Use a spoon dipped in warm water to help spread ice cream smoothly
  • Let kids decorate with sprinkles, extra cookies, or whipped cream swirls

  • “Rainbow to the gold”: Add rainbow sprinkles on one side and gold sugar on the other

Notes

Keep leftovers covered in the freezer. For clean slices, run a knife under hot water, wipe dry, then cut. Repeat as needed.
