Potato Omelet
This simple potato omelet can be served on its own
or used as a sandwich filling to stretch the meal even
further.

Ingredients
- 6 eggs
- 1/3 cup olive oil
- 1 large potato, scrubbed and finely sliced
- 1/2 onion, peeled and finely sliced
- Salt to taste
Directions
- Heat the olive oil over medium heat. Add the onion
and cook until tender and lightly golden.
- Add the potatoes, cover, and cook until tender but
not mushy.
- Beat the eggs in a bowl with a pinch of salt.
- Pour the egg mixture over the potatoes and onions.
Stir gently so the eggs spread evenly.
- Smooth the top and cook for a few minutes until
mostly set.
- Place the pan under a hot broiler briefly until
the top is set and lightly puffed.

hand because they work for breakfasts, soups,
casseroles, and side dishes.
