Red Beans and Rice Soup (Kid-Friendly)

Ingredients

  • 4 slices bacon
  • 2 celery stalks, chopped
  • 1 leek, sliced
  • 1 green bell pepper, chopped
  • 2 cans red kidney beans, drained (about 2-3 cups)
  • 1 teaspoon dried thyme
  • 1-2 bay leaves
  • 6 cups water
  • 1 teaspoon salt
  • ΒΌ teaspoon black pepper
  • 2 cups cooked rice

Instructions

  1. Cook bacon in a large pot until crisp. Remove, chop, and set aside.
  2. Chop celery, leek, and bell pepper into small pieces.
  3. Add vegetables, kidney beans, thyme, bay leaves, and water to the pot.
  4. Cover and cook over medium-low heat until vegetables are soft, about 20-25 minutes.
  5. Season with salt and pepper.
  6. Stir in cooked rice and heat through.
  7. Serve topped with chopped bacon pieces.

Notes
