Spicy Crockpot Roast Chicken

This seasoned whole chicken has plenty of flavor without requiring a complicated ingredient list. Cayenne adds a little heat, while paprika, thyme, garlic, and onion give the chicken a savory flavor.

  1. In a small bowl, stir together the salt, paprika, cayenne pepper, thyme or marjoram, black pepper, and minced garlic.
  2. Remove the chicken from its packaging. Remove the giblets if included and pat the chicken dry with paper towels.
  3. Place the chicken in the slow cooker.
  4. Rub the seasoning mixture over the outside of the chicken and inside the cavity.
  5. Place the quartered onion inside the chicken cavity.
  6. Cover the slow cooker. No additional cooking liquid is needed.
  7. Cook on Low for about 6-8 hours, depending on the size of the chicken and your slow cooker.
  8. Before serving, check the chicken with a food thermometer. The thickest part of the breast and the innermost portions of the thigh and wing should reach at least 165F.
  9. Allow the chicken to rest briefly before carving.
For less heat: Reduce the cayenne pepper or leave it out completely. The paprika, thyme, garlic, and onion will still give the chicken plenty of flavor.
