Spinach and Artichoke Dip

A creamy, cheesy spinach and artichoke dip baked until warm and bubbly. This crowd-pleasing appetizer is perfect for parties, family gatherings, and cooking activities with kids. Serve with crackers, bread cubes, or vegetables.

Ingredients

  • 8 oz cream cheese, softened
  • 1 (14 oz) can artichoke hearts, drained (or 3 fresh artichokes, cooked and prepared)
  • 1/2 cup frozen spinach, chopped and steamed
  • 1/4 cup mayonnaise (do not use Miracle Whip)
  • 1/4 cup Parmesan cheese
  • 1/4 cup Romano cheese (or use all Parmesan)
  • 1 clove garlic, finely minced
  • 1/2 teaspoon dried basil or 1 tablespoon fresh basil
  • Salt and pepper to taste
  • Optional: 1/4 cup mozzarella cheese, grated (for topping)

Instructions

  1. Allow cream cheese to come to room temperature.
  2. In a mixing bowl, cream together mayonnaise, Parmesan cheese, Romano cheese, garlic, and basil until smooth.
  3. Squeeze excess water from spinach. Chop artichoke hearts into small pieces.
  4. Add spinach and artichokes to cheese mixture and mix until well blended.
  5. Spray a pie pan with cooking spray and spread dip evenly into pan.
  6. Top with mozzarella cheese if desired.
  7. Bake at 350°F for 25 minutes, until heated through and slightly golden on top.
  8. Serve warm.

  • Kids can help mix ingredients and spread the dip into the pan.
  • Teach kids to squeeze spinach dry to prevent a watery dip.

Notes
