Cream of Squash Soup

Cream of squash soup

Ingredients

  • 1 medium squash cut in half or wedges
  • 3 tablespoons butter
  • 1 leek, chopped
  • 1/2 teaspoon ground ginger
  • 4 cups chicken broth

Directions

  1. Cook squash in the oven for 1 hour or until tender. Allow to cool and scoop out flesh from skin.
  2. In a saucepan, saute butter and chopped leek.
  3. Add ground ginger and stir in squash.
  4. Add chicken broth and simmer for 20 minutes.
  5. Puree in blender and serve.
Try This: Butternut squash or pumpkin both work well in this recipe.
