Cream of Squash Soup

Ingredients
- 1 medium squash cut in half or wedges
- 3 tablespoons butter
- 1 leek, chopped
- 1/2 teaspoon ground ginger
- 4 cups chicken broth
Directions
- Cook squash in the oven for 1 hour or until tender. Allow to cool and scoop out flesh from skin.
- In a saucepan, saute butter and chopped leek.
- Add ground ginger and stir in squash.
- Add chicken broth and simmer for 20 minutes.
- Puree in blender and serve.
Try This: Butternut squash or pumpkin both work well in this recipe.
