Stuffed Tomatoes

Stuffed tomatoes make a pretty lunch and can be filled with tuna salad, chicken salad, or another favorite mixture.

Stuffed tomatoes for Mother's Day lunch

Ingredients

  • 1 large tomato per person
  • 1 can tuna, drained and flaked
  • 4 teaspoons mayonnaise
  • 1 tablespoon chopped celery

Directions

  1. Mix the tuna, mayonnaise, and celery.
  2. Cut the stem off each tomato and scoop out the inside, leaving a shell.
  3. Spoon the tuna mixture into the tomatoes.
  4. Place on a baking sheet and broil 3 to 4 inches from the heat for 4 to 5 minutes until heated through.
Kid-Friendly Tip: Older kids can scoop and fill the tomatoes, but an adult should handle the broiler.
