Slow Cooker Pork Burritos

Slow cooker shredded pork burritos with beans cheese and sour cream

Tender slow-cooked pork makes a flavorful filling for burritos, tacos and taco bowls. Prepare the roast earlier in the day, shred it when tender, then mix it with salsa, onion and mild green chiles.

Ingredients

  • 1 pork roast, about 3 pounds
  • Salt and pepper, to taste
  • 1 small onion, chopped
  • 2 tablespoons diced mild green chiles, or more to taste
  • 1/2 cup salsa
  • 1/4 cup reserved cooking broth
  • 8 large flour tortillas
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 1/2 cups shredded cheese
  • Sour cream, salsa or guacamole for serving
  • Cooked rice, optional

Directions

  1. Season the pork roast with salt and pepper.
  2. Place the roast and chopped onion in the slow cooker.
  3. Cover and cook on Low for 7 to 8 hours or on High for 5 to 6 hours, until the pork is fork-tender and easily shreds. Cooking time may vary according to the roast and slow cooker.
  4. Transfer the roast to a cutting board and allow it to cool slightly.
  5. Reserve 1/4 cup of the cooking broth, then discard the remaining liquid.
  6. Shred the pork with two forks.
  7. Return the shredded pork to the slow cooker.
  8. Stir in the green chiles, salsa and reserved broth.
  9. Cover and cook for another 20 to 30 minutes, or until heated through.
  10. Warm the tortillas and fill them with rice, pork, black beans and shredded cheese.
  11. Serve with sour cream, salsa or guacamole.

Family-Friendly Option

Before adding the salsa and green chiles, set aside some plain shredded pork for children or family members who prefer a milder filling.
