Cherry Crepes

Crepe Ingredients

  • 4 cups milk
  • 5 eggs
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 2 cups flour
  • 1 tablespoon oil (for frying)

Cherry Filling Ingredients

  • ¼ cup sugar
  • 1 cup sour cream
  • 1 jar sour cherries (or 2-3 cups fresh cherries)

Instructions

  1. Lightly beat eggs. Stir in milk, sugar, and salt.
  2. Add flour and mix until smooth. Let batter rest 10 minutes.
  3. Heat pan and lightly oil. Pour batter to coat pan thinly.
  4. Cook until lightly browned on both sides. Stack and cover.
  5. Mix sugar and sour cream until smooth.
  6. Fill crepes with cherries, roll, and drizzle with cream mixture.
