This simple beef and bean chili is a good first slow cooker recipe. It uses familiar ingredients, can be made mild for children, and freezes well for future meals.
Ingredients
- 1 tablespoon oil
- 1 pound ground beef
- 1 small onion, grated or finely chopped
- 1 garlic clove, minced
- 1 can (28 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can chili beans, undrained
- 1 to 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon seasoning salt or regular salt
- 1/2 to 1 cup water or beef broth, as needed
Directions
- Heat the oil in a skillet over medium heat.
- Add the ground beef, onion, and garlic. Cook until the beef is browned and no pink remains.
- Carefully drain away the excess grease.
- Transfer the cooked beef mixture to the slow cooker.
- Add the diced tomatoes, tomato sauce, kidney beans, chili beans, chili powder, cumin, and seasoning salt.
- Stir in 1/2 cup water or broth. Add a little more if you prefer a thinner chili.
- Cover and cook on Low for 5-6 hours or on High for 2-3 hours.
- Stir, taste, and adjust the seasonings before serving.
Kid Chef Tip: Puree the diced tomatoes before adding them when children prefer a smoother chili without tomato pieces.
