Berry Crepes

Berry crepes are a fun breakfast or brunch recipe. Kids can help wash berries, stir the filling, and spoon the fruit topping over the finished crepes.

Berry crepes with raspberry filling

Ingredients

  • 2 egg whites
  • 2/3 cup milk
  • 2 teaspoons canola oil
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/4 cup reduced sugar orange marmalade
  • 1 cup unsweetened blueberries, strawberries, or raspberries
  • Sugar substitute equivalent to 8 teaspoons sugar, optional
  • 1/2 cup sour cream
  • 1/8 teaspoon cinnamon

Directions

  1. Place egg whites, milk, and oil in a bowl and whisk until blended.
  2. In a separate bowl, combine flour and salt.
  3. Add the flour mixture to the egg white mixture and blend well.
  4. Place marmalade in a saucepan and warm over low heat, stirring constantly until melted.
  5. Remove from heat and stir in berries and sweetener, if using.
  6. Mix sour cream and cinnamon together and set aside.
  7. Coat a small skillet with cooking spray.
  8. Place the skillet over low heat and add 2 tablespoons batter.
  9. Lift the pan to evenly coat the bottom with batter.
  10. Cook until the top is dry and the bottom is lightly browned.
  11. Remove the crepe to a wire rack and continue cooking until all batter is used.
  12. Preheat oven to 375 degrees F.
  13. Spread each crepe with 1 tablespoon sour cream mixture.
  14. Roll each crepe and place in a baking dish.
  15. Spoon berries over the top and bake 15 minutes.
