Directions

  1. Place the peas, water, lemon juice, mint, salt and pepper into a blender and blend until smooth.
  2. Divide the pea dressing between two wide-mouth Mason jars.
  3. Layer the chickpeas, celery, turkey, cucumber, tomatoes, apples, dried fruit and chives into each jar.
  4. Finish with the chopped lettuce or mixed greens.
  5. Seal the jars tightly with lids and refrigerate until ready to serve.
  6. Shake the jar before eating or pour the salad into a bowl and toss.
