This colorful salad combines turkey, crisp apples, vegetables and chickpeas in a portable Mason jar lunch. A simple pea and herb dressing adds fresh flavor while keeping the ingredients separated until you're ready to shake and enjoy.

Ingredients
1 cup cooked turkey, diced
1/2 apple, diced and tossed with a little lemon juice
2 tablespoons diced celery
1/4 cup diced cucumber
1/4 cup diced tomatoes
1/2 cup cooked chickpeas, drained
2 tablespoons dried cranberries or dried cherries
2 tablespoons chopped chives
2 cups chopped romaine lettuce or mixed greens
Pea Dressing
1/2 cup fresh or thawed peas
2 tablespoons water
Juice of 1/2 lemon
2 fresh mint leaves
Salt and pepper to taste
Directions
Place the peas, water, lemon juice, mint, salt and pepper into a blender and blend until smooth.
Divide the pea dressing between two wide-mouth Mason jars.
Layer the chickpeas, celery, turkey, cucumber, tomatoes, apples, dried fruit and chives into each jar.
Finish with the chopped lettuce or mixed greens.
Seal the jars tightly with lids and refrigerate until ready to serve.
Shake the jar before eating or pour the salad into a bowl and toss.

Kids can safely wash vegetables, tear lettuce, measure ingredients and build each layer. Encourage them to create colorful patterns inside the jar. It makes lunchtime even more fun!
