3 tablespoons butter
2 tablespoons all-purpose flour
1 can (12 fluid ounces) evaporated milk
1 cup water or turkey broth
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon onion powder
2 tablespoons butter
1 cup finely crushed herb-seasoned stuffing mix
1 cup cooked diced turkey
1 cup shredded cheddar cheese
2 cups prepared mashed potatoes
Directions
Preheat the oven to 350°F. Lightly grease an 8-inch square or 2-quart casserole dish.
Melt 3 tablespoons butter in a saucepan over low to medium heat.
Whisk in the flour and cook for about 1 minute.
Slowly stir in the evaporated milk and water or turkey broth.
Add the salt, black pepper, and onion powder.
Cook the sauce over low to medium heat for about 5 minutes, stirring frequently, until it thickens.
In a separate small saucepan, melt the remaining 2 tablespoons butter.
Stir the crushed stuffing mix into the melted butter and set it aside.
Spread the cooked turkey evenly in the prepared casserole dish.
Pour the creamy sauce over the turkey.
Sprinkle the shredded cheddar cheese over the sauce.
Spoon the mashed potatoes over the cheese and carefully spread them across the casserole.
Sprinkle the buttered stuffing mixture over the mashed potatoes.
Bake uncovered for 30-35 minutes, or until the casserole is hot and the stuffing topping is lightly browned.
Let the casserole rest for 5-10 minutes before serving.
