Burrito Bowls
These kid-friendly burrito bowls are an easy one pan dinner with ground beef, rice, beans, corn, and simple toppings.

Ingredients
- 1 small sweet onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 pound lean hamburger
- 1 (7-ounce) can corn
- 1 (7-ounce) can kidney beans, drained and rinsed, or other beans of your choice
- 1 (7-ounce) can crushed tomatoes
- 1/4 cup mild chunky salsa
- 1/2 cup rice
- 1 1/2 cups chicken stock
- 1/2 teaspoon cumin
- 1/2 teaspoon taco seasoning
- Salt and pepper, to taste
- Toppings: sour cream, cheddar cheese, guacamole, tortilla chips, cilantro, or avocado
Directions
- Add the bell pepper, onion, and hamburger to a skillet.
- Cook until the hamburger is browned, about 5 minutes.
- Add the remaining ingredients except the toppings.
- Bring to a light boil.
- Reduce heat, cover, and cook for about 20 minutes or until the rice is done.
- Serve with tortilla chips, sour cream, cilantro, or other favorite toppings.
Tip: This is an easy recipe to customize with black beans, extra corn, or mild taco toppings for picky eaters.
