Burrito Bowls

These kid-friendly burrito bowls are an easy one pan dinner with ground beef, rice, beans, corn, and simple toppings.

Burrito bowl cooked in one pot

Ingredients

  • 1 small sweet onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 pound lean hamburger
  • 1 (7-ounce) can corn
  • 1 (7-ounce) can kidney beans, drained and rinsed, or other beans of your choice
  • 1 (7-ounce) can crushed tomatoes
  • 1/4 cup mild chunky salsa
  • 1/2 cup rice
  • 1 1/2 cups chicken stock
  • 1/2 teaspoon cumin
  • 1/2 teaspoon taco seasoning
  • Salt and pepper, to taste
  • Toppings: sour cream, cheddar cheese, guacamole, tortilla chips, cilantro, or avocado

Directions

  1. Add the bell pepper, onion, and hamburger to a skillet.
  2. Cook until the hamburger is browned, about 5 minutes.
  3. Add the remaining ingredients except the toppings.
  4. Bring to a light boil.
  5. Reduce heat, cover, and cook for about 20 minutes or until the rice is done.
  6. Serve with tortilla chips, sour cream, cilantro, or other favorite toppings.
Tip: This is an easy recipe to customize with black beans, extra corn, or mild taco toppings for picky eaters.
