Stuffed Philly Beef Pies

These stuffed Philly beef pies wrap thinly sliced steak, peppers, French onion flavor and cheese inside pizza or bread dough. Make one larger pie to slice for the family or divide the dough into smaller portions for individual hand pies.

Stuffed Philly beef pie with steak, peppers and cheese

Ingredients

  • 1 package frozen or homemade pizza dough or bread dough, thawed
  • 1 1/2 pounds sirloin steak tips
  • 1 can French onion soup
  • 1/2 cup finely diced bell peppers, such as red, green and yellow
  • 1/4 cup shredded cheese, such as mozzarella or Monterey Jack
  • Pinch of salt
  • Pinch of black pepper

Directions

  1. Preheat oven to 350F. Line a baking sheet with parchment paper or lightly grease it.
  2. Cut the sirloin into small pieces, then pound the pieces between sheets of plastic wrap until very thin.
  3. Cook the steak in a large skillet over medium heat until browned and cooked through.
  4. Add the French onion soup, diced bell peppers, salt and black pepper. Continue cooking over low to medium heat until the peppers soften and most of the liquid has cooked away.
  5. Remove the skillet from the heat and let the filling cool slightly.
  6. Roll the dough into a large 10-12 inch circle for a family-size pie, or divide the dough into smaller circles for individual pies.
  7. Spoon the beef and pepper mixture onto the center of the dough, leaving enough empty dough around the edges to seal the pie.
  8. Sprinkle the shredded cheese over the beef filling.
  9. Fold or roll the dough around the filling and pinch the seams and ends closed securely.
  10. Place the filled dough seam-side down on the prepared baking sheet.
  11. Bake for about 35-45 minutes for a larger pie, or until the dough is golden brown and baked through. Smaller individual pies may bake more quickly.
  12. Allow to cool slightly, then slice and serve.

Keep the Filling from Getting Too Wet

Let most of the liquid from the French onion soup cook away before filling the dough. A drier filling is easier to wrap and helps prevent the dough from becoming soggy.

Kids Cooking Tip: Kids can measure the peppers and cheese, help roll the dough and sprinkle the cheese over the cooled filling. An adult should cut and cook the steak and handle the hot skillet, oven and baking sheet.
