This easy pot roast cooks beef and potatoes in a creamy onion gravy for a simple family dinner. Cream of mushroom soup and onion soup mix make the sauce especially easy to put together.
In a mixing bowl, stir together the cream of mushroom soup, onion soup mix and water until combined.
Spread a small amount of the soup mixture over the bottom of the slow cooker.
Place the beef roast in the slow cooker and arrange the potatoes around it.
Pour the remaining soup mixture over the roast and season with black pepper.
Cover and cook until the beef is tender and the potatoes are cooked through. The original recipe calls for about 6 hours on high or 8 hours on low.
Let the roast rest for several minutes before slicing or shredding. Serve with the potatoes and spoon some of the gravy over the beef.
Add More Vegetables
Carrots and onions can be added with the potatoes for an easy one-pot meal. Keep the pieces fairly large so they hold their shape during the long cooking time.
Kids Cooking Tip: Kids can scrub the potatoes, measure the water and stir together the soup mixture. An adult should handle the raw beef and hot slow cooker.
