One Pot Spaghetti Chicken and Rice

This easy skillet meal combines chicken, rice, tomato sauce, and melted cheese in one pan for a filling family dinner.

Ingredients

  • 1.5 pounds chicken breasts, skinless and boneless
  • 2 cups marinara sauce
  • 1 cup long grain rice or brown rice
  • 1 (15-ounce) can crushed tomatoes with juices
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup mozzarella, torn into pieces
  • Chopped carrots or bell peppers, if desired

Directions

  1. Combine the marinara sauce, rice, crushed tomatoes, and basil in a large skillet.
  2. Add chopped vegetables if using.
  3. Slice the chicken breasts into chunks and season with salt and pepper.
  4. Arrange the chicken on top of the rice mixture.
  5. Cover the skillet with a lid and cook over medium-low heat, stirring often and watching closely in case more liquid is needed.
  6. Cook until the rice is tender and the chicken is fully cooked.
  7. Top with mozzarella cheese and cook a few more minutes until the cheese is melted.
  8. Serve while still hot.
Tip: This recipe is a good place to add extra vegetables like carrots, peppers, or spinach.
