Chicken Bites

1 1/2 pounds boneless, skinless chicken breasts cut into bite-size pieces
1 1/2 cups of flour
2 cups vegetable oil for frying

1. Heat 2 cups of oil in a deep-fryer or large saucepan to 350 degrees.

2. Place flour in a large resealable plastic bag. Add chicken; seal bag and toss until chicken is coated with flour.

3.Fry chicken in batches until juices run clear and it is golden brown, 2 to 3 minutes. Drain on paper towels or on a wire rack.

Waffle Ingredients or use your favorite instant waffle mix
2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, separated
1-1/2 cups milk
1 cup butter, melted
1 teaspoon vanilla extract
1/2 teaspoon of cinnamon

In a bowl, combine flour, sugar, cinnamon and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter.

Dip the fried chicken bites in waffle batter until fully coated and deep fry at 350 degrees for 1 minute on both sides until golden brown. Drain waffle bite on a paper towel, cool and top with powder sugar and your favorite syrup for dipping. Your kids will love it.
