Chocolate Melt Away
Ingredients
2 Eggs
graham crackers/round vanilla cookies
1 T. Sugar
pieces of chocolate
Directions
On a cookie sheet, lay out 12-20 crackers or cookies, leaving space between each. Place a chocolate piece in the center of each. In a medium bowl, add 2 egg whites and a tbsp of sugar.
Whip until foam has shiny white peaks ( easiest with an electric mixer). With a spoon, take scoops of whipped egg white and surround each chocolate on all exposed sides. In a preheated 375 degree oven, place melt aways for 4-7 minutes. You'll know they're done when there is a hint of brown on the egg whites.
Remove from the oven and cool cool, if you can resist, about 2 minutes. Then enjoy!
This is a nice baked s'mores alternative (some people who keep kosher can't have regular marshmallow). A variation is to use larger crackers or cookies topped with a tsbp of ice cream. The ice cream is insulated from the oven heat by the egg white like a baked Alaska.
