Florentines Cookies

These crunchy Florentines cookies combine cornflakes, raisins, peanuts, and sweetened condensed milk into easy homemade cookies topped with melted dark chocolate. They make fun holiday treats and baking projects for kids and families.

Ingredients

Cookie Mixture

  • 1/2 cup raisins
  • 2 cups cornflakes, lightly crushed
  • 1/2 cup unsalted roasted peanuts, chopped
  • 1/2 can sweetened condensed milk

Chocolate Topping

  • 200 g (about 1 1/2 cups) dark chocolate, melted

Directions

Preheat oven to 350°F (150°C–175°C). Line a baking tray with baking paper. In a mixing bowl, combine the raisins, crushed cornflakes, and chopped peanuts. Add the sweetened condensed milk and stir until the mixture sticks together. Add a little more condensed milk if needed to help bind the mixture. Drop spoonfuls of the mixture onto the prepared baking tray. Bake for 10 to 15 minutes or until the cookie edges begin to brown lightly. Let the cookies rest on the tray for about 10 minutes before transferring to a wire rack to cool completely. Once cooled, spread melted dark chocolate over the cookies and allow the chocolate to harden slightly before serving.
Yield: About 18 to 24 cookies depending on size.

Kid Cooking Tip

Kids can crush the cornflakes, stir the mixture together, spoon cookies onto the tray, and spread on the melted chocolate.

Variation Ideas

Try shredded coconut, dried cranberries, sunflower seeds, white chocolate drizzle, or mini chocolate chips for different flavors.

Serving Ideas

Serve on holiday cookie trays, dessert platters, tea parties, or package as homemade gifts.
Allergy Note: If serving children with nut allergies, simply leave out the peanuts or substitute sunflower seeds or pumpkin seeds instead.
