4-Ingredient Breakfast Cookies

These easy breakfast cookies are made with just four simple ingredients and are perfect for busy mornings, lunchboxes, or after-school snacks. Naturally sweetened with ripe bananas, they're soft, chewy, and kid-friendly.
4 ingredient breakfast cookies made with oats and bananas

Ingredients

  • 1 cup oats
  • 2 ripe bananas, mashed
  • 1 egg
  • 1/4 cup mini chocolate chips

Directions

Preheat oven to 350°F (175°C). In a medium bowl, stir together the oats, mashed bananas, egg, and chocolate chips until well combined. Scoop the mixture into small mounds on a greased or parchment-lined baking sheet. Slightly flatten each cookie with the back of a spoon. Bake for about 10 minutes or until set and lightly golden. Allow the cookies to cool for several minutes before serving.
Yield: About 10 to 12 cookies.

Kids can mash the bananas, measure ingredients, mix the batter, and help scoop the cookies onto the baking sheet.

Variation Ideas

Try adding raisins, dried cranberries, chopped nuts, sunflower seeds, cinnamon, or shredded coconut for extra flavor and texture.
