Homemade Avocado Oil Mayonnaise
This easy homemade mayonnaise comes together in about 5 minutes using an immersion blender. Made with creamy avocado oil, fresh lemon juice, and Dijon mustard, it's perfect for sandwiches, salads, dips, and homemade dressings.
Prep Time: 5 minutes
Makes: About 1¼ cups
Ingredients
- 1 cup avocado oil
- 1 large room-temperature egg
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon fine sea salt
- 1 teaspoon water (optional, if needed to thin)
Directions
- Add the egg, lemon juice, Dijon mustard, sea salt, and avocado oil to a wide-mouth mason jar or tall blending container.
- Place the immersion blender directly on the bottom of the jar.
- Blend without lifting the blender for about 15-20 seconds until the bottom of the mixture becomes thick and creamy.
- Slowly lift the blender toward the top to incorporate the remaining oil until the mayonnaise is smooth and fully emulsified.
- If the mayonnaise is thicker than you prefer, blend in 1 teaspoon of water.
- Transfer to an airtight container and refrigerate immediately.

- Stir into coleslaw dressing.
