Cherry ripe slice
2 cups flour
2 tbsp cocoa
1 1/2 cups coconut
250 grams butter
1 cup sugar
200 grams dark chocolate
25 grams copha
200g shredded coconut
400g condensed milk
200g glace cherries, chopped
3-4 drops red food colouring (optional)
In a mixing bowl blend together flour, cocoa and coconut.
Melt butter with sugar until sugar and butter has melted.
Pour butter over dry ingredients and press into a sprayed casserole dish.
Bake for 15 minutes at 350 F.
Allow to cool and prepare filling.
In mixing bowl combine remaining ingredients and spread over crust.
Melt chocolate and copha in a saucepan over low heat or in the microwave.
Stir until melted and smooth then pour over cherry filling.
Chill several hours.
