Easy Strawberry Jam Cookies (Kid-Friendly Recipe)

Makes: About 15 cookies
Prep Time: 25 minutes (plus 1 hour chill time)
Bake Time: 8 minutes

What You’ll Need
1/4 cup butter (softened)
3 tablespoons sugar
1/2 teaspoon vanilla
1/2 teaspoon baking powder
1 cup all-purpose flour
1 egg (crack into a bowl and beat it with a fork)
About 1 cup strawberry jam
Extra flour for rolling dough

Let's Make the Dough
In a bowl, stir together the flour and baking powder.
In another bowl, mix the butter and sugar until creamy (use a spoon or hand mixer).
Add half of the beaten egg and the vanilla. Mix well.
Stir in the flour mix a little at a time. The dough will get thick.
Cover the dough and put it in the fridge for 1 hour to chill.

Time to Roll and Cut
Preheat oven to 400°F.
Sprinkle some flour on the counter. Roll out the dough to about 1/8 inch thick (like sugar cookies).
Cut 15 flower shapes with a cookie cutter (or a cup if you don’t have one).
Cut 15 circle cookies (about 2 inches wide), then use a smaller circle cutter (or bottle cap) to cut a hole in the middle of each round cookie.
Brush the round cookie with the hole using some of the leftover beaten egg.
Place that round cookie on top of a flower-shaped cookie to make a little cookie "bowl."

Fill and Bake
Carefully put your cookie "bowls" into a greased muffin tray.
Add 1 tablespoon of strawberry jam in the center of each.
Bake for 8 minutes, until the edges look slightly golden.
Let cool before eating — the jam gets hot!
