Traditional Irish soda bread

Irish Soda Bread is one of Ireland's most famous quick breads. Because it uses baking soda instead of yeast, it comes together quickly and is perfect for St. Patrick's Day celebrations, Irish history studies, or family baking projects.

Makes: 1 large loaf

Ingredients

  • 1 pound (450g) whole wheat flour
  • 4 ounces (110g) all-purpose flour
  • 2 ounces (50g) rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 3/4 cups (450ml) buttermilk

Directions

  1. Preheat oven to 450°F (230°C).
  2. In a large bowl, combine the whole wheat flour, all-purpose flour, oats, baking soda, and salt.
  3. Add enough buttermilk to form a soft dough.
  4. Turn dough onto a lightly floured surface.
  5. Knead very lightly. Do not overwork the dough or the bread may become tough.
  6. Shape into a round loaf and place on a greased baking sheet.
  7. Cut a deep cross across the top of the loaf.
  8. Bake for 10-15 minutes at 450°F.
  9. Reduce oven temperature to 400°F (200°C).
  10. Continue baking for 20-25 minutes or until the loaf sounds hollow when tapped on the bottom.
  11. Cool slightly before slicing.
