Mini Basket Dinner

Mini Salmon Potato Pastry Baskets
Fun party snacks you can help make!
What You Need:
For the Dough:
¾ cup all-purpose flour
A pinch of salt
3 ½ tablespoons cold butter (cut into small chunks)
½ egg yolk
3 tablespoons cold water
For the Filling:
1 ½ teaspoons olive oil
1 clove garlic (minced)
1 tablespoon chopped red onion
¼ cup mashed potatoes (store-bought or leftover)
¼ cup flaked cooked or smoked salmon
A pinch of salt and pepper
½ egg (beaten)
For the Colorful Topping (Optional):
1 small potato, peeled and boiled
2 tablespoons butter
A pinch of salt & white pepper
1 drop of food coloring (any fun color!)
How To Make It:
Make the Dough:
Mix flour and salt in a bowl. Add butter and use your fingers to squish until it looks like crumbs. Add egg yolk and water. Mix into dough. Chill in the fridge for 10–15 minutes.
Shape the Baskets:
Roll dough flat (about ⅛ inch thick). Cut small circles (about 2 inches wide). Press each into a muffin tin cup. Use a fork to poke little holes in the bottom so they don’t puff up too much.
Make the Filling:
Heat oil in a small pan. Add garlic and onions. Stir until soft. Add salmon and mashed potatoes. Mix well. Add salt and pepper.
Fill and Bake:
Spoon filling into each dough cup. Brush the top with beaten egg. Bake at 400°F for about 20 minutes, or until golden brown.
Decorate (Optional):
Mash the boiled potato with butter, salt, white pepper, and food coloring. Spoon into a plastic bag, snip the corner, and pipe swirls on top.
