Oreo Double Stuffed Pizzelle
These Oreo Double Stuffed Pizzelles combine crisp Italian pizzelle cookies with a creamy Oreo buttercream filling. Roll the warm pizzelles into tubes and fill them like cannoli, or serve the buttercream as a dip for a fun dessert everyone will love.
Pizzelle Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon pink Himalayan salt
- 1 teaspoon freshly grated nutmeg
- 1/2 teaspoon freshly grated star anise
- 3 large eggs
- 1 1/2 teaspoons baking powder
- 1/2 cup butter, melted
Oreo Buttercream Filling
- 1 cup butter, softened
- 6 Oreo cookies, finely crushed
- Seeds from 1 vanilla bean or 1 teaspoon vanilla extract
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon pink Himalayan salt
- 2 1/2 cups powdered sugar
- 1 to 2 tablespoons milk
Directions
In a large mixing bowl, beat together the sugar, melted butter, nutmeg, star anise, and eggs until smooth.
Add the flour, salt, and baking powder. Stir until a smooth batter forms.
Cover the bowl and let the batter rest for 30 to 60 minutes.
Preheat a pizzelle maker according to the manufacturer's instructions.
Drop the recommended amount of batter onto the pizzelle iron and cook until golden brown.
If making rolled pizzelles, carefully remove each hot pizzelle and immediately roll it around a wooden spoon handle or cannoli tube mold. Allow to cool completely before filling.
Make the Oreo Buttercream
Beat the softened butter until smooth and creamy.
Gradually add the powdered sugar, mixing well after each addition.
Add the vanilla bean seeds (or vanilla extract), lemon juice, salt, and crushed Oreo cookies.
Mix until combined.
Add milk one teaspoon at a time until the frosting reaches a smooth piping consistency.
Assemble
Transfer the buttercream to a piping bag.
Pipe the Oreo filling into both ends of the cooled rolled pizzelles until filled.
Alternatively, serve the Oreo buttercream as a dip alongside flat pizzelles.
Yield: Approximately 18 to 24 pizzelles depending on size.
