Rainbow Meringues

You will need:
2 egg whites
1/4 teaspoon baking powder
almond extract
Red, orange, yellow, green, blue, and purple food coloring (we used natural food coloring.)
1/2 cup of sugar


Instructions:
Preheat the oven to 200°F. Whip the egg whites along with the sugar, and almond extract. When half way to stiff peaks, separate into 6 bowls; one for each color. Then mix by hand.(DO NOT over mix.) Now prepare the sheet. Put wax paper on a cookie sheet. Put egg whites in a piping bag and layer them. Pipe small circles on the pan.(about the size of a slightly flattened Blow pop.)

Turn off the oven and leave the meringue in the oven for 20 minutes before taking them out. (DO NOT open the oven during this process.) Serve with caramel, (by the way, here's how to make caramel. Put granulated sugar in a pot with heavy cream. Milk makes an easy substitute. Stir until it looks like caramel.)
