Stuffed Eggs

This is a variation of a Deviled Egg recipe

Count approx 1 egg per person
So a family of 4 would use 4 eggs

Place your eggs in a pot, cover with cold water, and bring to a boil. Let it boil for about 2 min.
Drain and add cold water to cool.
When eggs cool, pill and slice in half.

Egg yolks should be firm. Scoop the yolks into a bowl.
Arrange your egg whites on a platter.

If you started with 4 eggs, add 1 teaspoon of mustard (any kind you like!)
and 1 tablespoon of mayonnaise to the yolks.
Mash with a fork, and add salt and pepper.

Using a zip lock bag, pipe your yolk mixture into the whites.

To garnish, use smoked paprika, or slice stuffed olives and place thin slices on each egg.

My kids absolutely adore stuffed eggs, and can never get enough.

It's great with BBQ, or as a side item with just about any meal.
