Watermelon Feta Bites

These Watermelon Feta Bites are a refreshing summer appetizer made with juicy watermelon, creamy whipped feta, crunchy pistachios, and sweet balsamic glaze. They look fancy enough for parties but are easy enough for kids to help assemble.

Serves: 4-6

Ingredients

• 8 ounces cream cheese, softened
• 8 ounces feta cheese, crumbled
• 3 tablespoons half-and-half
• 1/3 cup balsamic vinegar
• 24 watermelon squares, approximately 1-inch wide and 1/3-inch thick
• 1/3 cup pistachios, chopped

Optional Garnishes

• Fresh basil leaves
• Extra balsamic glaze

Directions

1. Place cream cheese, feta cheese, and half-and-half into a mixing bowl.
2. Beat until light and fluffy.
3. Set aside.
4. Pour balsamic vinegar into a small saucepan.
5. Bring to a gentle boil over medium-high heat.
6. Cook until reduced by half and thick enough to coat the back of a spoon.
7. Reduce heat to low and keep warm.
8. Arrange half of the watermelon squares on a serving platter.
9. Drizzle lightly with balsamic glaze.
10. Top each watermelon square with a spoonful of whipped feta mixture.
11. Add a small basil leaf if desired.
12. Place a second watermelon square on top to create a sandwich.
13. Gently press to secure.
14. Top with another small dollop of whipped feta.
15. Sprinkle with chopped pistachios.
16. Drizzle with additional balsamic glaze if desired.
17. Serve immediately.
