This Zucchini Pizza uses shredded zucchini to create a delicious pizza crust that's packed with vegetables. Topped with sauce, cheese, and your favorite pizza toppings, it's a fun way to use summer zucchini and introduce kids to new vegetables.

Ingredients

  • 2 cups shredded zucchini
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 pound ground beef, turkey, chicken, pork, or omit for vegetarian
  • 1 small onion, diced
  • 1 cup tomato sauce
  • 1 garlic clove, minced
  • 1 tablespoon fresh oregano or 1 teaspoon dried oregano
  • Pizza toppings as desired

Directions

  1. Preheat oven to 400°F.
  2. Grease a pie plate or deep-dish pizza pan.
  3. Place shredded zucchini in a bowl and sprinkle with salt.
  4. Let stand for 15 minutes.
  5. Transfer zucchini to a colander and drain well.
  6. Use paper towels to squeeze out as much moisture as possible.
  7. Place zucchini in a clean bowl.
  8. Add the egg and 1/2 cup mozzarella cheese and mix well.
  9. Press the mixture evenly into the prepared pie pan to form a crust.
  10. Bake for 15 to 20 minutes or until lightly browned and set.
  11. Meanwhile, brown the meat and onion in a skillet.
  12. Drain excess fat if necessary.
  13. Add tomato sauce, garlic, and oregano. Stir to combine.
  14. Remove from heat.
  15. Spread the sauce mixture over the baked zucchini crust.
  16. Sprinkle with the remaining mozzarella cheese.
  17. Add any additional pizza toppings.
  18. Return to the oven and bake for 15 to 20 minutes or until the cheese is melted and bubbly.
  19. Cool for 5 to 10 minutes before slicing.

Serves: 4 to 6
