Ingredients

  • 1 to 2 eggs
  • 1 to 2 tablespoons chopped spinach
  • 1 tablespoon water or milk
  • 1/4 cup diced ham
  • Salt and pepper, to taste

Directions

Add the eggs, chopped spinach, water or milk, and diced ham to a mixing bowl. Season with salt and pepper and beat together until combined. Pour into a hot lightly greased skillet and cook until the eggs are set, stirring occasionally if making scrambled eggs.
Yield: 1 to 2 servings.
