Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/2 cup butter, melted
  • 1 cup sour cream
  • 2 teaspoons vanilla extract

  • 1 1/4 cups berries
  • 1 1/4 cups chopped fruit
  • 1 1/4 cups raisins or dried cranberries
  • 1 1/4 cups chocolate chips
  • 1 1/4 cups shredded carrots or zucchini
  • 1 1/4 cups chopped nuts
  • 1/2 cup peanut butter
  • 1/2 cup pumpkin puree
  • 1/2 cup applesauce
  • 1 teaspoon cinnamon, nutmeg, pumpkin spice, or apple pie spice

Directions

  1. Preheat oven to 350°F.
  2. Line or grease a muffin tin.
  3. In a large bowl, combine flour, baking powder, baking soda, and salt.
  4. Add eggs, sugar, melted butter, sour cream, and vanilla.
  5. Mix until combined.
  6. Fold in your chosen mix-ins.
  7. Fill muffin cups about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for several minutes before serving.
