We are a visually impaired classroom that does a cooking class. We created a new recipe for St. Patrick's Day combining Boxty, Potatoes O'Brien, and our own spin!
We used the Sour Cream Sauce recipe that we found on this site to top our potato cakes. Enjoy!
Panda Boxty-Irish Potato Cakes
(Pronounced bocshthy)
Ingredients:
1-24 oz. prepared mashed potatoes
1/2 bag shredded potatoes
4- green onions
1-red pepper
1-yellow pepper
1/2 teaspoon ground coriander seed
1/2 teaspoon minced garlic
1 teaspoon baking powder
1-egg
1/4-1/2 cup flour
salt & pepper to taste
Directions:

Finely chop or put in a food processor the onion, and peppers. Mix mashed potatoes & shredded potatoes. Add the rest of the ingredients except the flour. Add enough flour to make a pancake batter consistency.

If it gets too thick, add a little milk. Fry in a skillet or griddle that has been lightly sprayed with Pam or melted butter. Fry until cooked through & brown. Serve with the sour cream sauce.

Sour Cream Sauce

1/2 cup sour cream
2 tablespoons chopped green onions
1/2 teaspoon minced garlic
1/2 teaspoon lemon juice
few drops hot pepper sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
pinch cayenne pepper
Mix all ingredients and refrigerate until ready to serve.
