Peanut Orange Chicken
This easy Asian-inspired chicken recipe combines sweet orange juice, tangy chili sauce, crunchy peanuts, and tender chicken. Serve it over rice or noodles for a quick family meal.
Ingredients
- 1 cup orange juice
- 1 cup sweet chili sauce
- 1/4 cup vinegar
- 1 tablespoon cornstarch
- 3-4 cups cooked chicken, sliced or cubed
- 1/2 cup peanuts
- 1-2 cups vegetables of choice, such as carrots, green beans, broccoli, or bell peppers
- Cooked rice noodles, white rice, or brown rice for serving
Directions
- In a medium saucepan whisk together the orange juice, sweet chili sauce, vinegar, and cornstarch.
- Bring the mixture to a gentle simmer over medium heat, stirring constantly until slightly thickened.
- Add the cooked chicken, peanuts, and vegetables.
- Cook for 3-5 minutes until everything is heated through and coated with sauce.
- Serve over cooked rice noodles, white rice, or brown rice.
