Blueberry Pancakes

These fluffy blueberry pancakes are packed with juicy berries and make a delicious breakfast or brunch recipe. Fresh, frozen, or dried blueberries all work well.

Ingredients

• 2 cups all-purpose flour
• 6 teaspoons baking powder
• 1/2 teaspoon salt
• 2 tablespoons sugar
• 2 eggs
• 2 cups milk
• 2 teaspoons vanilla extract
• 2 cups sour cream or vanilla yogurt
• 4 tablespoons butter, melted
• 1 cup blueberries (fresh, frozen, or dried)
• 1 tablespoon flour

Directions

1. In a small bowl, combine flour, baking powder, salt, and sugar.
2. In a large mixing bowl, whisk together eggs, milk, vanilla, sour cream or yogurt, and melted butter.
3. Add the dry ingredients to the wet ingredients and stir until combined.
4. In a separate bowl, toss the blueberries with 1 tablespoon flour.
5. Gently fold the blueberries into the batter.
6. Heat a lightly greased griddle or skillet over medium heat.
7. Pour batter onto the hot griddle and cook until bubbles form on the surface.
8. Flip and cook until golden brown.
9. Serve warm with syrup, fresh berries, or whipped cream.
