Blueberry Pancakes
These fluffy blueberry pancakes are packed with juicy berries and make a delicious breakfast or brunch recipe. Fresh, frozen, or dried blueberries all work well.
Ingredients
- 2 cups all-purpose flour
- 6 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 2 eggs
- 2 cups milk
- 2 teaspoons vanilla extract
- 2 cups sour cream or vanilla yogurt
- 4 tablespoons butter, melted
- 1 cup blueberries (fresh, frozen, or dried)
- 1 tablespoon flour
Directions
- In a small bowl, combine flour, baking powder, salt, and sugar.
- In a large mixing bowl, whisk together eggs, milk, vanilla, sour cream or yogurt, and melted butter.
- Add the dry ingredients to the wet ingredients and stir until combined.
- In a separate bowl, toss the blueberries with 1 tablespoon flour.
- Gently fold the blueberries into the batter.
- Heat a lightly greased griddle or skillet over medium heat.
- Pour batter onto the hot griddle and cook until bubbles form on the surface.
- Flip and cook until golden brown.
- Serve warm with syrup, fresh berries, or whipped cream.

Why Coat the Blueberries?
Tossing blueberries with a little flour helps prevent them from sinking and keeps extra moisture from thinning the pancake batter.
Tip: Frozen blueberries can be added directly from the freezer. Do not thaw first or they may turn the batter purple.
