Carrot Cook and Books
These are some really great books about carrots and growing them. Check them out from your library or buy a copy. Read the story. Then prepare the recipe below.
1 cup butter or oil
1 cup brown sugar
3 large oranges, grate the peel or 2 tablespoons orange extract
4 carrots, grated
1 2/3 cups flour
1 Cup wheat flour
2 teaspoons baking powder
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 cup raisins or chopped nuts, optional
Frosting, if desired
Grate orange peel and carrots, place in mixing bowl. Add butter, brown sugar, egg, grated oranges and carrots. Blend together. Add in flours, baking powder, cinnamon, nutmeg and salt. Blend together. If desired, add raisins or chopped nuts. Stir. Bake at 375 degrees for 12-15 minutes, until golden brown. Allow to cool and eat as is or frost the tops.
